Homemade Cinnamon Rolls

Essential Ingredients for Homemade Cinnamon Rolls

Active Dry Yeast: This is the powerhouse that makes your dough rise to fluffy perfection. Without it, your Homemade Cinnamon Rolls would be flat and disappointing, so activate it properly in warm milk for best results. In my experience, fresh yeast ensures that pillowy texture we all love. It’s a small step that yields big rewards in flavor and rise.

Ground Cinnamon: The heart of these rolls, this spice infuses every bite with that signature warm, aromatic kick. Combined with brown sugar, it creates a filling that’s sticky and irresistible. I always use high-quality cinnamon for deeper flavor in my Homemade Cinnamon Rolls. Don’t skimp—it’s what sets them apart from ordinary versions.

All-Purpose Flour: The base of the dough, providing structure while keeping things soft and tender. Measure it correctly to avoid dense rolls; too much, and they’ll be tough. For your Homemade Cinnamon Rolls, bread flour can sub in for extra chew if you prefer. It’s versatile and forgiving for home bakers like us.

How to Make Homemade Cinnamon Rolls

Prepare the Dough

Start by warming your milk to about 110°F—too hot, and it’ll kill the yeast, so use a thermometer if you’re unsure. Dissolve the yeast and a pinch of sugar in it, letting it sit for 5-10 minutes until foamy. This is crucial for the Homemade Cinnamon Rolls to rise beautifully. In a large bowl, mix in melted butter, eggs, sugar, and salt, then gradually add flour until a soft dough forms. Knead on a floured surface for 8 minutes; it should be smooth and elastic. Cover and let it rise in a warm spot for an hour—it’ll double in size, filling your kitchen with that yeasty promise of goodness.

Make and Spread the Filling

Once risen, punch down the dough and roll it into a 16×12-inch rectangle on a lightly floured counter. The surface should be even for uniform Homemade Cinnamon Rolls. Soften butter and spread it generously over the dough, then sprinkle with brown sugar and cinnamon mixture. I like to add a dash of nutmeg for extra depth—trust me, it elevates the flavor. Roll it tightly from the long side, creating a log that’s about 2 inches thick all around. Slice into 12 even pieces with a sharp knife or floss for clean cuts.

Bake to Golden Perfection

Place the slices cut-side up in a greased 9×13-inch baking dish, spacing them slightly for room to expand. Cover and let rise another 30 minutes until puffy—patience here makes all the difference in soft Homemade Cinnamon Rolls. Bake at 350°F for 20-25 minutes until golden brown; watch closely to avoid over-browning. Meanwhile, whip up the icing by beating cream cheese, butter, powdered sugar, and vanilla until creamy. Drizzle over warm rolls and serve immediately for that melt-in-your-mouth experience. For a quicker rise tip, check my breakfast rolls recipe.

Pro Tips for the Best Homemade Cinnamon Rolls

Activate Yeast Properly: Always proof your yeast first to ensure it’s alive—dead yeast means flat rolls. This simple check saves your batch every time.

Don’t Overbake: Pull them out when just golden; overbaking dries them out. The residual heat will finish the job for perfect softness.

Room Temp Ingredients: Use softened butter and eggs for even mixing. It leads to smoother dough and better rise in your Homemade Cinnamon Rolls.

You Must Know

  • These Homemade Cinnamon Rolls are best fresh but freeze well for up to a month.
  • The dough needs a warm, draft-free spot to rise properly—near a sunny window works wonders.
  • Cinnamon can vary in strength; taste your filling mix and adjust for your preferred spice level.
  • Icing thickens as it sits, so apply while rolls are warm for easy drizzling.

How to Store Homemade Cinnamon Rolls

To keep your Homemade Cinnamon Rolls fresh, store them in an airtight container at room temperature for up to two days. For longer storage, refrigerate them for about a week, though the texture might firm up slightly. Reheat gently in the microwave for 15-20 seconds or in a 300°F oven for 5 minutes to revive that soft, gooey center. Freezing unbaked rolls lets you bake them fresh anytime—thaw overnight and proceed with rising.

Customizing Your Homemade Cinnamon Rolls

Feel free to swap in whole wheat flour for half the all-purpose to make your Homemade Cinnamon Rolls a bit heartier without sacrificing much softness. Add chopped pecans or raisins to the filling for texture, or go dairy-free with plant-based butter and milk alternatives. For a citrus twist, zest an orange into the icing—it’s a game-changer. If you’re into variations, try my strawberry cream cheese heart danishes for a fruity spin.

What to Serve with Homemade Cinnamon Rolls

Pair these warm Homemade Cinnamon Rolls with a hot cup of coffee or tea to balance the sweetness perfectly. For a full breakfast, add scrambled eggs and fresh fruit salad on the side—think berries and yogurt for contrast. If brunching, serve alongside crispy bacon or a light green salad to keep things balanced. Beverages like orange juice or iced lattes complement the spices beautifully, making every bite even more enjoyable.

Ingredients

  • 01 4-5 cups all-purpose flour (spooned and leveled (520g-650g))
  • 02 1/4 cup granulated sugar ((50g))
  • 03 2 1/4 teaspoons instant yeast ((1 package))
  • 04 1/2 teaspoon salt
  • 05 3/4 cup water ((180mL)*)
  • 06 1/2 cup whole milk ((120mL))
  • 07 1/4 cup unsalted butter ((60g), cut into 4 slices)
  • 08 1 large egg (at room temperature)
  • 09 6 tablespoons unsalted butter ((85g), very soft)
  • 10 3/4 cup brown sugar ((150g) packed, light or dark)
  • 11 1 1/2 tablespoons ground cinnamon
  • 12 4 oz full fat block cream cheese ((115g), room temperature)
  • 13 5 tablespoons unsalted butter ((70g), room temperature)
  • 14 1 1/2 cups powdered sugar ((195g))
  • 15 1 teaspoon pure vanilla extract

Instructions

Step 01

In a large bowl, combine 3 cups of flour (to start), sugar, yeast, and salt. Whisk to combine and set aside.

Step 02

In a medium microwave safe bowl or cup, combine water, milk, and sliced butter. Microwave in 10 second bursts until the butter just melts and the mixture feels warm but not hot. You can also do this with a pot placed on a stove burner set to low heat.

Step 03

Whisk the egg into the water mixture to combine.

Step 04

Pour the wet ingredients over the flour mixture. Using a wooden spoon, mix together until you have a very thick and sticky dough.

Step 05

Add another 1 cup of flour to the dough and mix until it starts coming together into ball.

Step 06

This next step can be done directly in your bowl or on a lightly floured work surface. Knead the dough, adding flour as needed to keep it from sticking to your hands / the sides of the bowl, until it's smooth, elastic, and slightly tacky. If you poke the top of the dough, it should spring back - if the indent remains, the dough needs more kneading.

Step 07

Cover the dough and set aside for about 20 minutes. The dough will puff up slightly but won't double in size. This is just to relax the gluten and make the dough easier to roll without it pulling in on itself.

Step 08

Turn the rested dough onto a lightly floured work surface and roll it out into a roughly 14x10 inch rectangle. Use your hands to press and pull the edges to get as nice of a rectangular shape as you can - it doesn't have to be perfect though!

Step 09

Spread the softened butter over the dough, leaving a roughly 1/2 inch boarder along the edges. Sprinkle the sugar on top and use your hands to spread it out into an even layer over the butter. Finally, sprinkle the cinnamon evenly on top.

Step 10

Working from the longer side of the dough, roll it up into a log.

Step 11

Cut about 1/2 an inch off each end of the log (this just makes for nicer and more uniform rolls - you can bake them off separately or just skip this step if you don't mind the appearance).

Step 12

Use a sharp serrated knife or unflavored dental floss to cut the log into 12 even rolls. If using a knife, cut the rolls using a sawing motion to prevent squishing. If using floss, break off a large string of unflavored dental floss and wiggle it under your log of dough positioned where you'd like to cut. Lift the ends of the floss up and over the log and cross to form an X. Pull on the ends of the floss to cut through the dough (see above post for visual).

Step 13

Arrange the rolls cut side up in a 9x13 inch baking dish. There should be a tiny bit of space between each roll but it's fine if they're touching.

Step 14

Cover the rolls and set aside in a warm place for about 45 minutes or until about doubled in size. My favorite place to keep cinnamon rolls during this time is in the oven (it shouldn't be on or hot) just because it keeps the rolls safe from any cold drafts. They'll be pressed up against each other once they puff up - that's normal!

Step 15

Uncover the rolls and place into the center of your preheated oven. Bake for 25 to 30 minutes or until a nice golden brown on top. Set aside while you make the icing.

Step 16

In a medium sized bowl, combine icing ingredients. Using an electric mixer fitted with the paddle attachment or a wooden spoon by hand, cream together until smooth. If using a mixer, start on low speed just to incorporate everything together and then whip on medium speed to smoothen the mixture out.

Step 17

While the cinnamon rolls are still warm, spread the icing on top. It'll melt slightly and make them extra gooey!
